Shopping at VF on a Budget!
We're not cheap, but we are easy!
One of the constant struggles for us is managing our prices. When I was growing up, it was no big deal to go to the freezer and pull out a Rib Eye or a couple packs of Lamb Loin Chops for dinner without a thought. When we started our meat company a few years back, we realized that it was a lot harder to decide what to have for dinner when we had to look at the price tag. Granted, we are not exactly "paying" those prices, but there are opportunity costs to each cut that we feed our family. This experience created a keen sensitivity towards our pricing and making sure that everyone has access to what we do here. To that end, we try and make sure that if anyone comes to us with a budget and an open mind, we can put together tasty and affordable options. Here are a couple of examples:
LAMB: I believe Loin Chops are the best cut of lamb. However, at $20/lb they are a luxury. Try grilling up some shoulder chops at $12/lb. Cook them hot and fast so you get a great crust, crispy fatty bits, and a nice medium rare on the meat. It's a little more work to get the meat, but the flavor is amazimg.
BEEF: Prime Rib ($25/lb) leftovers are my favorite sandwhich, but tough on the wallet. Check out my serving suggestion for Prime Rib, but substitute Eye of Round. Once the 2.5 hours are up, put the roast in the freezer for 20-30 minutes so it is firm enough to slice thinly. Not only does this "stretch" the amount you have, but thinly sliced and medium rare mean you will have a super tender sandwhich!
PORK: Pork Tenderloin($22/lb) Medallions are delicious! So is our Pork Scallopini ($14/lb) and it's super simple. These thin slices of pork leg are great to keep on hand for those nights when you need something satisfying and quick. Check out this Scallopini suggestion that takes about 15 minutes not counting boiling the water!
CHICKEN: It can be really hard to pay $6.50/lb for a whole chicken when Rocky and Rosie are on sale for $1.99/lb. This is a classic example of you get what you pay for, but that doesn't put $15 back in your wallet. Here are a couple of options to help out. You can always save 10% by asking for a frozen chicken. If you stock up with six or more frozen birds, you get the wholesale price of $4.75/lb. You can get a chicken every week through our Chick-A-Week program for as low as $14 per bird or about $4 a pound!
Dog Food or People Food?
Offal, or organ meat has greatly increased in demand over the past few years. I can remember sheep shearing season on the ranch growing up, and Grandma Parks setting out cold heart and tongue sandwiches for the crew. It wasn't because we ddn't have anything else, it was because it tasted so good! Today, with the "trend" of snout to tail eating, offal has become popular again. Many folks are buying offal and feeding it to their dogs as a means of feeding them meat that they can rely on. We get calls all the time asking us to save all the organ meat we throw away. We don't throw much of anything away. However, we have a new offering for those of you that love offal, either for yourself or for your pets. The box will contain whatever we have a lot of at the time and usually will be 60-80% liver, either beef or lamb. We will always try to put some of the tastiest bits in, and feel free to let us know what you like.

Special Orders
We love getting "tested" here at Victorian Farmstead. We believe that with very few exceptions, if it comes from a beef, lamb, pig or chicken we can make it happen. We put in our cutting instructions on Sunday nights with our butcher shop, Golden Gate Meat Co. If you let us know by then, your order will be ready Thursday afternoon. Just call or e-mail Adam at adam@vicfarmmeats.com to place your order. It is usually best to call as a discussion about what you are trying to accomplish can lead to some pretty cool collaborations!
What A Year 2013
Will Be!
Things are happening so fast, I'm taking down our Happy Holidays article around the first of March! 2013 will see our biggest growth yet. We have signed a letter of intent to lease the meat counter in the new Community Market at the Barlow in Sebastopol. After two years of exploring options to build our own facitliy at the Barlow, we have decided that partnering with Community Market provides all the benefits of being in the Barlow at a price we can afford. Meat will be a new offering for Community Market and we are thrilled they chose Victorian Farmstead as their purveyor.
Further excitement in that we are very close to leaseing our own USDA inspected butcher shop in Petaluma. This will allow us ultimate control over how our meat is cut and wrapped for our customers. There is much work to do before it is official, but it looks very good as of the beginning of March! More news in the "Weekly-ish" Newsletter, so be sure to sign up at the right.

Our Ranchers & Friends
Stemple Creek Ranch raises the majority of our beef. Located on the border of Sonoma and Marin Counties, Loren & Lisa Poncia do an incredible job of not only raising the best beef anywhere, but also in taking care of the land the cows are raised on.
Golden Gate Meat Co. North is the USDA butcher shop that cuts and wraps our weekly harvest. The Offenbach Family and all their staff does an amazing job with all our normal needs and with all the special orders and change orders we throw at them each week!
