Pressure Cooker Lamb Shanks

This is a great use of the pressure cooker (PC)! Lamb shanks need low and slow cooking, as long as four or more hours, to be properly tender. You can get that using a pressure cooker in less than an hour without losing any flavor. A few tips…As with any braised meat, you will get much better flavor and juiciness if you sear the shanks first. Our fancy, electronic PC has a sear/browning setting, but I don’t like it. Clean an extra pan and sear your shanks in a cast iron skillet. Same goes for making the sauce or gravy after the shanks are cooked. I like to remove the shanks from the PC and pour the remaining liquid in a sauce pan to be reduced and finished with a few pats of butter. Enjoy!
